La Vara

La Vara is a study and celebration of Jewish and Moorish legacies in regional Spanish cuisine from chefs Alex Raij and Eder Montero. With its unique lens and appreciation for centuries of cross-cultural influence, La Vara's menu is perfumed with aromas of saffron, cumin and orange blossom, exploring the intersection of colonialism, conversion, and resistance that define the cuisine.  La Vara is a marriage of Raij and Montero's respective backgrounds, showcasing food and wine that's at once contemporary, original and authentic - ever evolving and always delicious. Located in Cobble Hill, La Vara's innovative small plates are bold and improvisational, best enjoyed alongside its curated list of wines and seasonal cocktails that further emphasize its distinct identity.
